La crema diplomatica è l’unione di crema pasticcera e panna montata con lo zucchero a velo. Solitamente la proporzione è di 2/3 crema pasticcera e 1/3 panna, se si vuole ottenere una crema più morbida si può fare anche metà e metà, dipende dai gusti. La crema pasticcera deve essere fredda prima di unirla alla panna quindi io consiglio di prepararla in anticipo magari il giorno prima. La panna invece, per non farla smontare, va montata sul momento.

Se la crema è troppo dura e fredda per via del frigo basta mescolarla un po’. E’ molto importante non smontare la panna quando si uniscono i due ingredienti, mescolate con un cucchiaio di legno lentamente dal basso verso l’alto. Si può conservare in frigo per 2-3 giorni e si può usare per farcire svariati dolci.

      

Procedimento di preparazione

      

  • in una ciotola capiente unire tuorli, zucchero e amido di mais
  • in un pentolino antiaderente mettere il latte e la buccia di un limone e far sfiorare il bollore

      

  • con una frusta mischiare bene i tuorli, lo zucchero e l’amido
  • versare il latte caldo nella ciotola con i tuorli, lo zucchero e l’amido e amalgamare bene tutto velocemente

      

  • trasferire il composto nel pentolino sul fuoco
  • far cuocere a fuoco lento e girare continuamente con un cucchiaio di legno in modo da non farla attaccare sul fondo. Quando si addensa è pronta
  • farla freddare velocemente perché continua a cuocere anche fuori dal fuoco. Trasferire il composto in una ciotola e immergerla in acqua fredda girando con il cucchiaio

      

  • versare la panna in un recipiente e aggiungere lo zucchero a velo
  • montare la panna con lo sbattitore elettrico o in una planetaria

      

  • quando è ben ferma è pronta
  • unire i due composti 2/3 si crema pasticcera e 1/3 di panna

      

  • mischiare lentamente dal basso verso l’alto per non smontare la panna
