La pasta al forno con polpettine: una foto basta per farvi venire fame. Pennoni avvolti da un sugo impreziosito da piccole polpettine di carne con la mozzarella che filerà, una volta cotta, e abbondante parmigiano. Tutto racchiuso da una crosticina croccante davvero irresistibile. Il segreto per la perfetta riuscita della pasta al forno è la necessità di un sugo cotto molto lentamente e le polpettine che devono essere davvero mini. La ricetta richiede un pochino di tempo per la preparazione ma non sarà assolutamente tempo sprecato. Il profumo invaderà tutta la casa e stuzzicherà l’appetito di tutti. Una volta cotta consiglio di aspettare 5 minuti prima di servirla a tavola e mangiarla. Il giorno dopo è ancora più buona.

Procedimento di preparazione

  • mettere, in un ampio recipiente, il mix di carne macinata
  • condirla con sale, pepe e un pizzico di noce moscata
  • aggiungere 50 g di parmigiano e 2 uova leggermente sbattute
  • amalgamare tutti gli ingredienti
  • fare delle piccole polpettine

  • ci vuole un pochino di pazienza ma più sono piccole e più sono sfiziose
  • cuocerle in padella con un filo d’olio extravergine d’oliva
  • una volta cotte metterle da parte
  • adesso bisogna preparare il sugo: versare in una pentola la passata di pomodoro e aggiungere mezza cipolla e 2 spicchi d’aglio. Io ho usato un trucco della nonna ovvero uno stecchino per tenere tutto fermo. Una volta cotta elimino facilmente sia la cipolla che l’aglio

  • 1 carota precedentemente pulita e lavata
  • olio extravergine d’oliva (3-4 cucchiai) e sale qb
  • cuocere il sugo a fiamma bassa per circa 45 minuti mescolando ogni tanto

  • cuocere la pasta in abbondate acqua salata. Consiglio di usare la pasta corta, io ho scelto i pennoni
  • scolarla molto al dente, 5 minuti prima del tempo e condirla con il sugo. Ho preferito fare questa operazione gradualmente aggiungendo un po’ di pasta e un po’ di sugo così si insaporisce meglio
  • aggiungere anche il parmigiano e mescolare

  • aggiungere le mini polpette e mescolare. Non tutte, lasciarne qualcuna per decorare la superficie
  • mettere sul fondo di una pirofila uno strato di sugo e versare metà della pasta
  • tagliare a dadini la mozzarella ben scolata e aggiungerla. Lasciare qualche pezzettino per la decorazione della superficie
  • versare l’altra metà della pasta
  • se necessario aggiungere ancora un pochino di sugo

  • decorare la superficie con le polpettine e la mozzarella lasciate da parte e abbondate parmigiano
  • cuocere in forno già caldo a 180 gradi per 30 minuti circa
  • una volta sfornata aspettare 5 minuti prima di servirla
  • ps il giorno dopo è ancora più buona
