Rotolo di frittata formaggio e salmone

Scenografico e versatile il rotolo di spinacini e salmone è davvero gustoso! Ideale per un picnic, sfizioso per un antipasto o buffet, jolly per una cena per ospiti inattesi. E’ semplicissimo da fare per i suoi pochi ingredienti e piatto ideale per una cena estiva. I colori vivaci danno gioia alla tavola e tagliato e impiattato diventa anche molto raffinato. Potete usare anche altri ingredienti…l’effetto sarà comunque superlativo!

Procedimento di preparazione

  • in un grande recipiente unire le uova, il parmigiano, sale e pepe. Mescolare bene tutto il composto con una forchetta
  • aggiungere un goccio di latte e amalgamare
  • da parte frullare gli spinacini precedentemente puliti e lavati e aggiungerli al composto di uova sbattute

  • versare il composto in una teglia 30 x 30 cm foderata con carta forno e cuocerla in forno già caldo a 180 gradi per circa 15 minuti
  • lasciarla raffreddare leggermente e poi rigirarla sull’altro lato per avere un effetto ottico finale più carino
  • farcire con un formaggio morbido tipo Philadelphia e salmone affumicato
  • arrotolare delicatamente la frittata e avvolgerla nella pellicola trasparente. Farla freddare in frigo per circa 2 ore e solo allora tagliarla a fettine
